Andhra Style Creamy Korean Buldak Noodles

Ingredients
  

Main

Instant Korean ramen – 2 packs (140–160 g)

Water – 3 cups

Andhra Base

Oil – 2 tbsp (30 ml)

Butter – 1 tbsp (15 g)

Garlic (chopped) – 1½ tbsp (20 g)

Green chillies – 2

Curry leaves – 10–12

Onion (sliced) – 80 g

Sauce & Cream

Buldak sauce – 1 packet (or 1½ tbsp)

Fresh cream – 3 tbsp (45 ml)

Milk – ¼ cup (60 ml)

Cheese – 2 slices (40 g)

Spice Boost

Red chilli powder – ½ tsp

Black pepper – ½ tsp

Garam masala – ¼ tsp

Salt – ¼ tsp (optional)

Method
 

  1. Boil noodles
    Boil noodles for 2½–3 minutes. Drain and reserve 2–3 tbsp water.
  2. Prepare base
    Heat oil and butter. Add curry leaves, green chillies, and garlic. Sauté till light golden. Add onion and cook till slightly soft.
  3. Add spices
    Add chilli powder, pepper, and garam masala. Cook 30 seconds.
  4. Add noodles & sauce
    Add noodles and buldak sauce. Toss on medium-high flame for 2–3 minutes.
  5. Add creamy layer
    Add milk, cream, and cheese. Mix on low flame till melted.
  6. Final toss
    Increase flame and toss for 1 minute for slight roasting.

Notes

  • Slightly undercook noodles for best texture
  • Do not add excess liquid
  • Use wide pan for proper roasting
  • Final high-heat toss is essential
  • Add cream/cheese to adjust spice
