- Boil noodlesBoil noodles for 2½–3 minutes. Drain and reserve 2–3 tbsp water.
- Prepare baseHeat oil and butter. Add curry leaves, green chillies, and garlic. Sauté till light golden. Add onion and cook till slightly soft.
- Add spicesAdd chilli powder, pepper, and garam masala. Cook 30 seconds.
- Add noodles & sauceAdd noodles and buldak sauce. Toss on medium-high flame for 2–3 minutes.
- Add creamy layerAdd milk, cream, and cheese. Mix on low flame till melted.
- Final tossIncrease flame and toss for 1 minute for slight roasting.
Notes
- Slightly undercook noodles for best texture
- Do not add excess liquid
- Use wide pan for proper roasting
- Final high-heat toss is essential
- Add cream/cheese to adjust spice
